Homemade Pasta

Friends, there are fewer things more delicious than homemade carbohydrates. And homemade pasta is unbelievably yummy and easy-peasy. (My disclaimer is that I have a pasta press, but really, a rolling pin and a small sharp knife or pizza cutter does the job too.)

Can I strongly suggest that you give it a try?

The recipe I used is simply
 3 eggs
1 3/4 cup flour
2 teaspoons olive oil
Dash of salt
 Beat eggs until well-scrambled. Mix in flour, oil and salt, knead and slowly add small bits of flour if you need to.
 Knead about five minutes.
Let the dough rest for 30 minutes, wrapped in waxed paper. Letting your dough rest is absolutely required.
 Then start your water boiling and roll out dough and slice noodles to your desired width. Boil about 2 minutes and drain. But for the love of all that is holy DO NOT RINSE.

 Smother in sauce and go for it.

I know you might be wondering why would someone make pasta instead of buying a box, and you know, that is always an option. But seriously, the time and energy it took to simply mix and roll is comparable to driving to the grocery store and buying it, bringing it home and cooking it.

And I'm not kidding here about the yum-factor. 

Please try it. Even if it's just a special treat now and then, homemade noodles are one of the finer things in life.

Will you teach me? Seriously. I have tried to make homemade noodles for chicken noodle soup 3 or 4 times and have failed miserably every single time.

You know, the first time I made pasta with the kids I wondered why I hadn't done it before. It is so surprisingly easy. And so much fun—like rolling and playing with play dough. Lovely food project you shared with your own children!
