How to Make Cookie Pie

So, you know what I LOVE? Kids who cry and cry and snot on you. And then cry some more.

Kids who cough in your face.

Kids who sneeze on you.

Now, to be clear, my kids, as sick as they are, have had "Cousins Camp" all week with their cousins (DUH!) on my side, and it's been a BLAST! Exhausting, but a blast. But nonetheless, the incessant sickness is wearing on even me, so to control the negativity, I bring you COOKIE PIE.

This all the rage on the internets these days, OBB did one, and I've seen it several other places too. I made up my own because that's how I roll.

So, ready? Set, COOKIE PIE!

First, buy a pie crust, because this is not high class pie we're talking about. Okay, if you're hardcore, you have my permission to make one but really, just buy one. I made quiche for dinner so I had an extra one lying around (I bought a two pack.)

Next, assemble your ingredients.

Okay, so if you're SUPER not hardcore you could buy cookie dough, shove it in the pie crust and bake it, but I kind of dislike store-bought cookie dough, and really, that's not that much fun.


Chocolate Chip Cookie Pie Filling
1 cup butter
1 1/2 cups PACKED brown sugar
2 eggs
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon almond extract
2 cups flour
2 cups chocolate chips

Optional: Heath toffee bits or peanut butter chips or caramel chips for topping


Cream butter, brown sugar and eggs together. 
Add salt, baking soda and extract, mix. 
Slowly add flour as you mix. Don't let it get to the same consistency as cookies. You don't want it to be that dry, this needs to be a bit stickier, just a bit though, it should still hold it's shape pretty well. If you need a bit more flour, add a bit more, if you need less, quit. 
Add chocolate chips. 
Fill pie crust. You will have a bit of extra dough. Poor you. I'll let you decide what to to do with it. Add a bit more flour and bake them up like cookies, or just you know, eat it with a spoon when no one is looking. 


Top the dough with Heath bits or chips or whatever you want that is good. 


Bake for 15 minutes at 375 degrees. If it's too doughy after that continue baking at 5 minute increments until you're happy. 15 was perfect in my oven. Let it cool, it should be barely warm or completely cool before you eat it. I think it took 30 minutes to cool. Cut and top with ice cream or whipped cream or whatever your hear desires.

It's SUPER rich. I mean, like I could barely finish one slice, and that is saying something because I have a very high tolerance for rich foods. DELICIOUS! I only got one piece because my children stole the rest and ate it in the wee hours of the morning before I was conscious. Stinkers.
